I live about a mile from the Tennessee River and I spend hundreds of enjoyable hours around the water each year. Across the bridge is a little community called Lacey's Spring and it is primarily known for it's gas stations. In fact the area is more commonly known as "Gasoline Alley" and, until recently, was noted for it's low gas prices. Unfortunately for the past several years the rising gas prices have affected even these stations and many have closed. The area now is little more than a portion of the commuting corrider from Arab to Huntsville. A friend, Darryl, has a small engine repair shop there and he does almost all of my small engine work or he at least orders parts for me, but there is a really great Cajun restaurant just across the road from his shop. The little Cajun spot is only open Thursday thru Saturday so if you have a taste for some spicy Louisiana cuisine Sunday through Wednesday you have to go into town. Crazy George, the owner, does most of his work in catering and this is the truck he uses to pull his little trailer that he operates out of. Mmmm, when I was in the Navy we would call this a "Roach Coach", but that name certainly doesn't apply to the Cajun Cafe operation. I've bought many plates of Crawfish, shrimp, and gumbo from George and I have never been disappointed. If you like Cajun food and have never had bread pudding with rum sauce then you're missing out on a real treat. Once in a while I will make it, but it's very involved and I have a hard time finding the time for it these days.
